Chocolate Cupcake

The lone crusader, thats the phrase which came to my mind when I clicked the featured image. My 6 year old knows when she hears the click of the oven door, that I am upto something. She suddenly fancies herself as a cat and will be marking in and around me. She will assimilate all her patience for the day and shall be watching every move I make. Cupcakes are one of her favourites and she by now knows that they are on the making. Its a perfect climate outside, sun shining bright and hot. I do refer a lot, and this time I have referred to @Chef John kanell for the basic recepie, with a bit of my imagination in it. Thanks chef, for your wonderful channel, you whisk wonders.

The ingredients

  • 1/4 cup sour cream (my deviation 1/4 cup yogurt )
  • 1/2 cup buttermilk
  • 2 eggs
  • 1/3 cup vegetable oil ( my devation sun flower oil)
  • 2 tsp Vanila extract
  • 1/4 cup coffee or milk ( its upto your taste)
  • 1 1/2 cups all purpose flour
  • 1 1/2 cups granulated sugar
  • 1/4 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt

The way to go

Sift baking soda, APF , cocoa powder and salt. I usually sift two to three times. In a large bowl whisk the eggs, add all the wet ingredients and mix well, until a smooth mixture. Add the dry ingredients to this mixture and mix well. Pour it into the cupcake holders, bake it at 180° for 15-20 minutes.

It is said that a flat top is what makes a perfect cup cake, and when you really want your cup cakes to be perfect, the universe conspires.

The cat is still marking me. She loves her cupcake with frosting. Made a simple nutella buttercream frosting to top the cupcakes.

  • 113 gms of butter
  • 105 gms of Nutella, pinch of salt
  • 200 gms of icing sugar
  • 2-3 tbsp of whipping cream

Beat butter well, add nutella, whisk till it combines well, add sifted icing sugar, combine well, add the whipping cream, mix it to a smooth texture. Scoop.it to a piping bag and you are ready for action.

My ‘cat’ loves to pipe her cup cakes and I love watching her do that.
