Oats Banana Muffins

The lust for taste never ends, when all the bakes proves a sin to the health , we find other ways to indulge ourselves. This one is just like that. Sin in a healthy way. Presenting the oats banana muffins. The above was the narrative in a philosophical perspective. The real story is something different. I asked one of my dear friends to fetch me some oats, since she was ordering online for her provisions. The generous soul, brought me a 2kg pack of oats which can feed me over an year. I had to do something with that. Apparently, this recipe is nothing but a surplus management . There was enough ripe bananas lying over my kitchen counter to feed this idea. The birth of the muffins , was intellectually satisfying.

The need of hour, taste which satisfies the palate and in limited calories, beat it with oats banana mini cakes. No added sugars. Could be in the healthy food category yet you can indulge with a grin. Lip smacking, spongy and munchy

Ingredients
Oats – 2 cups or 200gm
Banana – 3 to 4 well ripe
Baking powder – 1 tsp
Baking soda – 1/2 tsp
Salt – 1/4 tsp
Cinnamon powder (optional) – 1/4 tsp
Oil / melted butter – 1/2 cup
Egg – 2
Vanilla – 1/2 tsp
Sugar / honey – 2 tbsp (optional)
Raisins/walnuts/almonds/chocolate chips – 1 cup

Fine powder the oats .In a bowl Add baking powder, baking soda, cinnamon powder and salt with powdered oats and mix well. (dry mix)

In another bowl mash the bananas well, add oil or melted butter, egg, vanilla and mix well. if you are a sweet tooth and having a bit more sinning threshold, can add sugar or honey to this mix. (wet mix)

Combine the dry mix and the wet mix and mix well.

To jazz it up, add a cup of crunchiness in the form of dry fruits, nut or chocolate chips. (calorie meter may sound weird, but just meditate)

Transfer the batter to a greased muffin pan. If you can’t get hold of a pan, muffin liners would do the job. Might have to use two or three liners together, to hold the shape. (depends on the quality of the liners)

That’s it, bake the beauty in an oven, pre-heated to 190 degrees, for 20 -22 minutes or until a toothpick inserted comes out clean.

The muffins could be stored in room temperature for about two days or in an airtight container for a week.

munch it on….devour the chunk with a lessened guilt ! after all life is still beautiful.
